Food Allergies

Many families have to adjust their diets because one or more family members have food allergies. Please see the Whole Foods page for ideas using soy milk rather than cow's milk. Below is information about diets that are wheat-free (gluten-free) and yeast-free.

Wheat-Free Tips

Most spice blends and shredded cheeses have a bit of flour in them in order to make things not stick to each other. Apparently there are seasonings on some fast food French fries that have the bit of flour in them also.
Start getting REALLY into Mexican food. You can use corn tortillas instead of flour! -- SoCalPam

Flour-less Cookies

1 cup Peanut Butter - name brands work best
1 cup sugar
1 egg
1 teaspoon vanilla
Stir all ingredients together, mixing well. Use a teaspoon to scoop put walnut sized balls of dough and shape them. Some people like to roll the dough balls into sugar but I don't. Place cookies on a cookie sheet about 2 inches apart. Press each with a fork. Bake at 350 for about 10-12 minutes. You may have to check the time with these. If you cook them too long, they will be VERY hard. Too short of a cooking time, and the cookies will fall apart!! These saved my life when I was first diagnosed!

Tuna Salad

2 to 3 T water
1/8 t unbuffered, corn free Vitamin C crystals
1 ripe Avocado
1 can 7 oz. albacore tuna in spring water
5 - 6 small radishes, minced
Spinach leaves, optional
Combine water and c crystals, stirring to dissolve. Mash half of the avocado with a fork. Stir in the dissolved C crystals. Set this dressing aside. (This may taste like it needs a dash of salt, but the tuna contains enough for the whole dish) Combine drained tuna and minced radishes. Add dressing and stir to mix. If you want a thinner dressings, just add another T or so of water. Arrange torn spinach leaves on plates and divide the tuna between them. Cut the remaining half of avocado into strips. Arrange them attractively over and around the mound of tuna salad. Variations: add diced jicama for more crunch. Increase the amount of Vit. C crystals if you prefer more 'tang'.

Substitute Mayonnaise (Egg free)

1 1/4 t dry mustard
2 T hot water
1/2 c raw or dry roasted cashews or other nuts
1 c water
1 t vit. C crystals, unbuffered
2T oil (expeller pressed safflower or canola is good)
2 t starch (choose from arrowroot, kudzu, tapioca starch flour or potato starch)
1/2 t salt
optional additions:
fresh parsley
fresh chive
dash cayenne pepper
Combine mustard and hot water in a small cup; set aside to dissolve. Blend cashews until they are a fine powder. Add remaining ingredients, including the mustard mix. Blend for one full minute, stopping once to scrape the bottom of the blender jar with a knife. Pour the liquid into a small saucepan to cook a few minutes, whisking or stiffing, until it just starts to thicken. Refrigerate in a scalded jar up to a week.
