Strawberry Bread

1 1/2 C flour
1/2 tsp salt
1 tsp cinnamon
1/2 tsp baking soda
1 C sugar
2 eggs, well beaten
2/3 C melted butter (I use melted margarine)
1 (10 oz.) pkg. Frozen strawberries, thawed with juice (make sure it is a 10 oz. pkg.)
1/2 C walnuts (optional)

Sift together the dry ingredients. In separate bowl, mix remaining ingredients. Stir strawberry mixture into dry ingredients, just until mixed and moistened. Put batter into a greased and floured 9x5x3 inch loaf pan. Bake at 350 degreesfor one hour or until done (according to toothpick test). Freezes well.

FARMER'S BRUNCH CASSEROLE FOR TWELVE

6 cups frozen shredded hash brown potatoes
1-1/2 cups shredded cheddar cheese (6 ounces)
2 cups diced cooked ham or Canadian-style bacon
1/2 cup sliced green onions
8 beaten eggs or 2 cups fresh or frozen egg product, thawed
2 12-ounce cans (1-1/2 cups each) evaporated milk or evaporated skim milk
1/4 teaspoon salt
1/4 teaspoon pepper

Grease a 3-quart rectangular baking dish. Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese, ham and green onion. In a large mixing bowl combine eggs or egg product, milk, salt, and pepper. Pour egg mixture over potato mixture in dish.

Bake, uncovered, in a 350F. oven for 45 to 55 minutes or till center appears set. Let stand 5 minutes before serving. Makes 12 servings. Make-Ahead Tip:The night before, prepare casserole. Cover and chill. To serve, bake as directed except increase baking time to 55 to 60 minutes.

Sausage Crescent Nuggets

1 lb highly seasoned pork sausage
1 (8oz) pkg cream cheese
2 pkgs crescent rolls
1 egg white, beaten
Poppy seeds

Preheat oven to 350. In medium skillet, lightly brown sausage and drain. While sausage is still hot, add cream cheese and stir until cheese is melted and mixture is creamy. Cool completely. Separate crescent rolls into two rectangles. Form log of sausage mixture lengthwise down center of each rectangle. Fold over the long sides of pastry to cover sausage log. Place on ungreased cookie sheet, seam side down. Brush with egg whites. Sprinkle with poppy seeds. Bake 20 min. until crust is golden. When completely cooled, slice into 1 1/2 in. slices. Make ahead tip: Make sausage and cream cheese filling the night before. Warm SLIGHTLY on LOW power in microwave, being very careful not to cook. Continue with recipe as directed.

Breakfast Burritos

I make breakfast burritos. One roll of sausage, half a bag of frozen hash browns, and ten eggs, cheese, a package of small soft shell tacos. Cook the sausage and hash browns, beat the eggs together add a little water. Pour the egg mixture over the sausage, hash browns, cheese, cook until the eggs are finished. Roll into the soft shell tacos, place in bags in the freezer. This makes 20 or so breakfast burritos.
