Tips for Baking Garlic

Use a garlic baker or wrap the garlic in foil. Fold the foil several times so you have a nice thick package for the garlic. Preheat the oven to 275. Peel the papery layer off the garlic and cut the tops off - about 1/4 to a 1/2 inch off the top. Preheat the oven to 275. Place the garlic on the foil and drizzle with olive oil. I usually sprinkle a little salt on mine, sometimes some pepper as well. Bake for one hour and then baste with the olive oil in the packet or drizzle some straight from the bottle if you are afraid the packet will tear. At this point, I sprinkle herbs on the top - fresh are nice if you have them, if not you can use some dried Italian Herbs. If I use dry herbs, I usually have them soaking in about a 1/2 tablespoon of olive oil while I am baking the garlic for the first hour, then I pour all that over the heads of garlic. Put the garlic back in the oven and roast for another hour. -- Kara

Get the really big garlics that are about 2-3 inches in diameter. After they are cooked, you squeeze out the soft insides (or use a knife) to spread on bread. -- Martha R.

Bake several large bulbs of elephant garlic at one time. I blend it with a dash of salt and a little bit of olive oil in my food processer and then store it in an airtight container.
I use it to:
spread on bread
add to soups
add to casseroles
flavor vegetables
add to sour cream and cottage cheese that has been creamed in the food processor - add a little dill weed and other favorite herbs and spices and you have a yummy dip.
add to chili and stews
add to barbeque sauces and marinades
spread it on crackers
add it to a mixture of mayo and a little mustard and you have a GREAT sandwich spread.

Fresh right out of the oven eveyone likes it on bread as a spread. Leftovers are used on everything. My 6dd likes it on veggies, mixed in mashed potatos, on baked potatos, on tortillas. My 3.5dd likes it in her scrambled eggs with salsa on top. We eat it in or on most everything, except fruit or dessert. Baking it seems to make the flavor stronger, so go lightly if your family isn't used ot it. -- Melinda in TX
